DANISH PASTRY
1 c. butter or margarine
2 c. warm milk
3/4 c. sugar
2 pkg. yeast
6 c. flour
1 egg plus
1 egg white

Mix everything in a bowl, let rise.

Cream Filling
1 c. milk
1/3 c. sugar
1 egg yolk
1 t. vanilla½ t. salt
3 T. flour

Mix milk, sugar, salt & flour in a small saucepan, and cook until thick. Adda small amount of hot mixture into the egg yolk. Mix it back in and bring to a boil. Add vanilla. (I think you could replace this with 1 c of vanilla pudding)

Almond Filling
½ c. butter
1/3 c. oats
3/4 sugar
3 T. almond extract

Mix this all together.

Stir butter, milk and sugar together until butter is melted. Add yeast and let stand until bubbly. Add eggs, salt and flour. Beat together with a spoon--no kneading! Let raise 1 1/2 hours in a warm place. Punch down and let raise 45 minutes more. Roll. and shape into either 3 pastries, sweet rolls or Danish pastry (Roll out dough, spread out Let rise 30 minutes).

Bake 375 20-30 minutes.

This is half of the dough, rolled out onto a jelly roll pan (10 inches by 15 inches).

The oatmeal mixture is easy to make, just blend the ingredients together.


I rolled half of this batch on a jelly-roll pan. First, put the cream filling on center third of the dough. Then add the buttery oatmeal mixture. It doesn't have to be perfect. It all tastes good when it is finished. To braid, just start on one side, pull one of the strips to the other side, then the opposite side. It braids up pretty fast.

This is what the braid looks like, just before it's ready to go into the oven. It needs to get cooked through, but not burnt. Enjoy!!

I love dying eggs! These ones were dyed with commercial dye, but I like to use flowers, onion skins and purple cabbage, too.

It's a beautiful day and I'm grateful for what it means to me.
It is the key to my salvation, and I'm amazed that Jesus Christ would give his life for me. The resurrection is overwhelming!

Spring is the start of new things to come. I love the new flowers.

This happened on Thursday.

OK, today I've have a hard and wearing day at the Doctor's office at Hill Field. I have a pain in my chest (11 weeks now) that won't go away. All I know is that it's not my heart.



So, I go to jump on the freeway to go home. Since when is the turning-left lane driver got the right of way? The answer, is when it is a bigger vehicle - like a moving truck! Well, the huge truck squeezed me out of the lane entry, with a big SUV right on my back-side, squeezing, too. I wouldn't let her in, she kept pushing me all the way, I'd move over a lane, and so would she. I try not to be a competitive driver, but some things just make me mad. Well, she started swerving in and out of traffic.



I'm driving along, and the highway patrol puts the lights on - right behind me. I pulled over to the other lane, and he passed me. WOW, what a relief that was. We (Bren & boys were with me) watched as he pulled the rude SUV driver over in a trucker parking place, and I'm sure she got a ticket. Bren said that it was one of the first times she's ever really seen a cop when you needed one!



It was a good day driving.
