Tonight I'm making my Mom's (Joyce Welch)
Sausage and Rice Casserole
1 chopped onion 4 ribs celery, chopped
1 chopped green pepper 2 pkgs. Lipton chicken noodle soup dry mix
2 pounds sausage (I use 1 lb.)
2 cups uncooked rice 3 1/2 cups water
Saute' sausage, onion, green pepper and celery until sausage is brown. Add rest of ingredients and put into an instant pot (I suggest a 6 quart) for 20 minutes. Natural release 10 minutes and you are done! Add slivered almonds on top when serving.

This recipe took my Mom 2 hours to cook in the oven. I'm so grateful for our modern appliances!
