 I love recipes.  I have gathered a lot of them.  Some I've tried, some I have not.

I found a great recipe for apple pie, but my hubby doesn't like pie crust.  I made crepes and used it for the filling.  It is the most delicious apple ever.  I'm adding it here so I don't lose it.

The Best Apple Pie

Filling

6-7 Granny Smith apples, peeled, cored and sliced thinly

1 1/2 teaspoons cinnamon

1 cube of butter (8 Tablespoons)

3 Tablespoons flour

1/4 cup water (I used a bit more)

3/4 cup sugar

Melt butter in a saucepan.  Add flour and  simmer for one minute, whisking constantly.  
Add water, sugar and apples.  Simmer until the apples are cooked.

If you are making pie, leave the apples out of the mixture.  Roll out your crust, add sliced apples and pour sauce over them.  Add a top crust and bake 425 degrees for 15 minutes.  Reduce heat to 350 degrees and bake 45 minutes more.


The Best Pie Crust

This turns out great thick or thin.  It has made me a pie crust snob.

2 cups flour            1 cup shortening [Crisco]

1 teaspoon salt        1/3 cup milk - 1 Tablespoon vinegar added

Add salt to the flour.  Cut shortening into flour until it is the size of peas.  Add curdled milk.  Mix lightly.  Roll half of mixture on a floured surface.  I use a pillow case, and throw it in the wash when I'm done.  Transfer to pie pan.  This makes 2 - 3 crusts.


Crepes

4 eggs                    2 cups milk

2 cups flour            1/2 cup melted butter

Mix eggs, milk and flour together until smooth.  Add butter.  Cook like thin pancakes on a slightly greased skillet.
