A Little of this . . .and a Little of That

My sister-in-law, Kathy LOVES these.  I make them when we go camping together.



Date Bar

Crust

1 3/4 cups quick oats             1 teaspoon baking soda

1 3/4 cups flour                      1 cup packed brown sugar

1 cup butter                            

Mix well.  The mixture will be crumbly.  Put half of the mixture into a greased 9 X 13 pan.


Filling

2 cups dates, pitted and chopped        1/2 cup water

1/2 cup white sugar                            1/2 to 1 cup roasted nuts [I like almonds or walnuts]

Cook in a saucepan until pulp is soft and well mixed.  Let it cool down a little.  Put this over the packed half of the mixture in 9 X 13 pan.  Cover with the second half of the mixture.



Bake 350 degrees for 30 - 45 minutes, until the top crust begins to brown.  Sprinkle with powdered sugar.

One of our favorite desserts is date bar.  I like to make it when we go camping, especially with Al's bro &  his wife, Dan & Kathy.

Date Nut Bars

Filling
1 pound chopped dates
1/2 cup sugar
1 cup water
     Boil 5 - 10 minutes and let cool.  Add 1 teaspoon vanilla and 1 tablespoon of butter.

Cookie Crust
1 3/4 cups oatmeal
1 cup brown sugar
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda

     Combine dry ingredients.  Mix in:
3/4 cup melted butter

     Press half of the mixture into a 9 X 13 greased pan.  Add filling.  Sprinkle the rest of the crust mixture over the filling.

     Bake 350 degrees for 20 - 25 minutes.  Top with powdered sugar, if you'd like.
