Shrimp

I don't know if people know how to cook shrimp.  On many buffets it is way over-cooked. 


Here is my method of cooking shrimp.


Bring water to a boil.  I add half a package of Especias Mixtas - Spice Mix from the Mexican section in the grocery store.  I also add some cerole seasoning.  Mix with a teaspoon of salt.  

Add shrimp and cook only until it turns pink!

Remove from heat, put cold water over shrimp after removing what you can of the boiling water.

Add ice.  Remove liquid and serve with cocktail sauce.  Yummy!
