Mint Log

1 12 oz package chocolate chips
1 cube (1/2 c.) butter or margarine

Melt together. Remove from heat and add:

1 t. mint flavoring
2 eggs
2 c. powdered sugar
30 oz mini marshmallows
1 -2 c. nuts - optional

Combine until chocolate-coated.

Roll in crushed graham crackers.

Put on wrap - makes about 6.
Roll tightly and chill.

Add a bow and give to your friends
and neighbors.

Sidney & I had a swimming party. Al and KyeLee had a barbeque party.

I love the little figures people put on the back of their cars to tell you about their families.
I saw one the other day that was fish. I've seen the traditional "people" stickers - with each member doing their favorite thing, flip-flop and flowers.
I must admit - I've never seen this one before AND I love it!!!

I can be fun - sometimes it is not.

My 82 & 83 year old in-laws want to go camping.
My FIL can't move very well - just got out of the
care facility. They wanted to go with us for 5 days.

My hubby talked them out of it.
He had to make a deal.

They will be going over labor day.

We will see what happens.

Big Day for us yesterday. SKye took Anniche and his three little girls to the temple - to be sealed together - forever.

We spent most of the day together. We went to the open house of the Oquirrh Temple.

We got to take the girls to dinner in the Jordan River Temple.

Al was SKye's escort.
Jennifer Vick was Anniche's escort.
I got to be KyeLin's escort.

Skye got a room for 60, and not one chair was empty.

Even though it was raining outside, our hearts were full of sunshine.

I can't believe I haven't blogged for 6 weeks!! I just feel so busy -
Al's dad went to the hospital, and now he's in a care facility - at least until next week.

I had finals at school - stressful!

I'm closing a lot of criminal files at work - and trying to get witnesses to trials.

It's good weather - I planted a garden - with the help of Al. He built me some WONDERFUL raised beds.

My mama just had a birthday - OK - anyone related - start saving your money - Mom wants to go to the Drew Carey show for her 80th birthday - May 23, 2010!!! She wants at least 25 people to go, so we can go on a bus and be garanteed to get on the show. That should be fun.

Al's new favorite cookie (and it's healthy, too)

Loaded Oatmeal Cookies

1/4 c butter
1/4 c brown sugar
1/2 c sugar
1 t. ground cinnamon
1/8 t. salt
1 egg
1 t. vanilla
3/4 c flour
3/4 c oatmeal
1/4 c. flax seed meal
1/4 c. wheat germ
2 oz. dark chocolate (or semi-sweet choc. chips)
1/4 c. craisins
1/4 c. toasted walnuts or almonds

Mix everything together. Bake 350 degrees for 9-11 minutes.
The recipe says it makes 30, but I made 17.

Happy April Fool's Day!!

I took some cookies to work - and the trick might be - everyone is afraid to eat them, in case it's a trick!!

I made simple Peanut Butter Cookies.

Here is the recipe:

PEANUT BUTTER COOKIES

1 cup peanut butter
1 cup sugar
1 egg

Mix together, make into balls - the size of walnuts.
Dip a fork in sugar, and press both ways, making a
criss-cross design. Bake 350 degrees for only 8
minutes. DO NOT OVERBAKE!

I sprinkled the tops of mine with chocolate chips
before I baked them.

Easy and yummy

Fast & Gooey Brownies

1 c. butter or margarine, melted
2 c. sugar
1/2 c. cocoa powder - not hot cocoa mix!!

Mix together. Add:
4 eggs
1 1/2 c whole wheat flour
1-2 t. vanilla and/or almond extract
Nuts - optional - I sprinkle chopped nuts over half of the mixture.

Mix until blended. Pour into an 8 X 13 GREASED pan. Bake 350 degrees for about 20 minutes.

Here is my coffee cake recipe from Central Jr. High School.


Coffee Cake


2 c. flour

1/3 c. butter, shortening or margarine

1/2 c. sugar

1/2 t. salt

4 t. baking powder

3/4 c. (or a little more) millk

1 egg

4 t. vanilla


Mix together and put into an 8 X 8 GREASED pan. Double ingredients to make a 9 X 13 pan.


Topping


1/3 c sugar

2 T flour

2 T butter, shortening or margarine

1/2 t. cinnamon


Chocolate chips - optional

Here's a tip for the new year:


Don't get too close to the fireplace when starting it up.

You could lose some hair - and some eyelashes!


OK - every person has their moment to shine.
Something that sort of bugs me is:
We're in church - the time is running over -
I want to go home -
The music leader gets up - We get to sing all
7 verses of the song!!

I guess what reminded me of it - I'm going to school.
There is a hummm - I'll do what my kids do - a guy
and he isn't very true to himself. Somedays he comes
to class dressed like a beggar, somedays he looks like
he just stepped off the cover of GQ, some days he comes
to class ready to go deer hunting. That just seems
weird to me. Find yourself, be yourself.
